He roasts the agave in an earth oven fired with pine, mango wood, and volcanic rock, then mills it by limestone tahona and ferments it in open pine vats with natural spring mountain water. The result is dense and layered rather than overtly smoky, opening with roasted nuts and burnt toffee before easing into a caramel finish.
